La Caja China was created with the whole pig barbecue in mind. However, how many people have a whole pig in their freezer just waiting for the opportune time to break out and party? Not many of us, so we find the need to locate a whole pig for sale. Whole pig prices in the United States vary from day to day as the market and demand fluctuates. Finding a local butcher, meat locker, or meat market is one way to purchase a whole pig and get the best whole pig price.

Another way is to simply order a whole pig from your local supermarket, expecting a delay for delivery of about two weeks. Some people prefer to purchase from a farmer or local market. We found a merchant that offers pork from our farm to your fork, custom slaughtered for your party needs. This merchant sells whole pigs to the consumer for $2.30 a pound (2014 rate) for free range non-antibiotic fed pigs. The harvesting fee is $100.00, and the approximate weight is 190 pounds, making the total cost for the harvested pig at $537.00.  Shipping is extra but the first 150 miles from the farm are free, each additional mile is 50 cents. If you pick up the pig yourself from the farm they deduct 10 cents per pound of weight.

Once you have your pig ready to be roasted, then your choice is what marinade to use for the best flavor and how to prepare the pig. One of my favorite pig roast seasoning mixes is 6 tablespoons garlic salt, 6 tablespoons paprika, 4 tablespoons sugar, 3 tablespoons onion salt, 2 tablespoons brown sugar, 2 tablespoons chili powder, 6 tablespoons salt, 2 tablespoons cayenne pepper, 2 tablespoons cumin, 4 tablespoons black pepper, and 1 tablespoon coriander combined with olive oil. Rub the entire pig thoroughly, inside and out. Bake in your La Caja China roaster.

Invite all your friends and family for a reunion weekend party. Tell each family to bring a tent and sleeping bags. Set up one large tent for shelter with tables and chairs underneath. Bring a radio for music or a karaoke stand for even more fun and laughter. Let the children loose under the stars to play tag and chase lightning bugs. Prepare pasta salad, corn on the cob, rolls and slaw to go with the roasted pig. Serve s’mores for dessert to go with the whole roasted pig cooked in the La Caja China roaster.
