La Caja China has been fondly referred to as "The Magic Box." The question many people have is what is it? What can I cook with it? Where did it come from? We've already addressed, "What can I cook with it" so let's answer the other two questions…

Legend has it that Chinese workers brought this method of cooking with them when they came to Cuba to work on the railroads in the 1850's, thus the name 'Caja China' which means Chinese Box. Others claim that similar boxes are used throughout the Caribbean for roasting but no one knows for sure why they are called Chinese. The origin of the name may remain a mystery. But the facts are undeniably mouth-watering. The Guerra family brought the secret of making these extra-ordinary roasting boxes from Cuba to Miami. And the results are uniformly spectacular. A perfect outcome, every time, guaranteed!

Whether it's a whole pig or a pork shoulder, lamb or roast beef, chicken or turkey, all you have to do is add charcoal every hour. The same for a lobster or clam bake. It's that easy. And for a 70 pound pig, only about 3 ½ hours roasting time.

The principle is simple. A plywood box, lined with marine grade aluminum with a steel top for building a charcoal fire. The meat or poultry to be roasted goes in first, so the heat source is on top. Because no smoke or accelerant fumes touch the meat, it is 'organic ' in a sense. There are 3 sizes available and all come with the necessary parts and complete instructions. There are also a variety of accessories, including a top grill, smoker and rotisserie, so you can cook chicken or burgers on the top while your pig or lamb is roasting in the box.

All the boxes are made in Miami at the family owned and operated company. Roberto Guerra, the president and son of the founder, has appeared on The Food Network and is a regular at the South Beach Food and Wine Festival.
