Follow these steps to cook perfect chicken and ribs

With using La Caja China Model 1, we cooked 3 whole chickens and 9 full rack of pork ribs, all at once. Besides the ability to hold a large quantity of meat, using La Caja China is the best because the meat comes out tasty and tender.

  • Butterfly the chicken so it is easier to cook
  • Flip two over-sized grills upside down into the box
  • Place the meat onto the over-sized grills
  • Do not double stack the meat

  • Attach the lid to cover the box
  • Add from 14 – 16 lbs. of charcoal onto pan
  • Once the charcoal is lit, give 20 minutes to spread the charcoal
  • After the 20 minutes, spread the charcoal evenly on the charcoal pan (if you don’t have a rake, you can use the double grip to spread the charcoal)

  • Give an hour for La Caja China to work it’s magic
  • After the hour, remove the pan and flip the meat so the cooked side is upside down.
  • Glaze the meat with your choice of marinade
  • Put the pan back on the box
  • Add about 7 lbs. of more charcoal
  • Cook the meat for an additional 45 minutes
  • After 45 minutes the meat should be ready
